RECIPE OF THE WEEK
VOSPOV KHEEMAH
For 6 people
1 ½ cups red lentils
4 cups water
1 ½ cups fine bulghor
1 TBSP salt
Pinch of black pepper
Pinch of red pepper
½ cup oil
½ cup of butter or margarine
1 medium onion, chopped
3-4 green onions, chopped
1 red or green pepper, chopped
1 bunch parsley, chopped
Wash lentils, add water and bring to a boil. Turn down to a simmer and cook for approximately one hour.
Turn off heat. Add bulghor, add seasonings and stir well.
While lentils are cooking, sauté onion, ½ of green onions, and ½ of red or green pepper in melted oil and butter mixture until soft and carmelized.
Mix into lentils.
Make into kufta-shaped forms and garnish with the remaining mixture of parlsey, chopped red or green pepper, and chopped green onion.
If you'd like to make more, double the measurements depending on how many people you intend to feed. |
